The new product contains whole wheat flour, green buckwheat flour, oat bran with beta-glucans, and wheat gluten.
“In our laboratory, under the scientific supervision of the Russian Academy of Sciences’ Alla Kochetkova, we developed a recipe and production technology for a specialized baked food product intended for the dietary management of carbohydrate and fat metabolism disorders in people with metabolic syndrome,” stated researcher Yulia Frolova.
In addition to the main ingredients, the formula includes sunflower extract, sunflower protein concentrate, barley malt extract, and chlorogenic acids.
Frolova noted that a high-protein diet promotes fat loss and reduces the risk of cardiovascular disease. Dietary fiber improves metabolism, while phenolic acids provide an antioxidant effect.
Plans are in place to include this innovative product in comprehensive nutritional programs aimed at combating obesity.
